Choice

Choice Band / Choice Scarf Jolly / Adamant
Moveset EVs
~ X-Scissor
~ Poison Jab
~ Pursuit
~ Aerial Ace / Brick Break
6 HP / 252 Atk / 252 Spe

Buzzing by, Beedrill is mediocre enough to use a Choice set. D/P gave it a good STAB move in X-Scissor, and it can still use its Poison STAB with Poison Jab instead of Sludge Bomb. Pursuit is the most notable addition, so it can chase down any escaping flowers and Psychics. The last slot is filler: Aerial Ace can take care of other Bug-types in NU, while Brick Break can take care of Steels that resist Bug/Poison/Dark.

Baton Passer

Leftovers / Focus Sash Jolly
Moveset EVs
~ Baton Pass
~ Swords Dance / Agility
~ X-Scissor
~ Substitute / Roost
6 HP / 252 Atk / 252 Spe

Beedrill learns Baton Pass, and can BP either Swords Dance or Agility. But, here is the catch: Beedrill is not sturdy enough to Baton Pass much. Focus Sash can allow for an Agility; then, Beedrill can BP to your preferred target. The absence of Sand Stream and Snow Warning in UU helps Beedrill accomplish this.

Beedrill learns Baton Pass via Pokémon XD.

Swords Dance/Agility Sweeper

Leftovers / Focus Sash Jolly / Adamant
Moveset EVs
~ Swords Dance / Agility
~ X-Scissor
~ Poison Jab
~ Pursuit / Aerial Ace / Brick Break
6 HP / 252 Atk / 252 Spe

The sweeper is much like the Choice Bander, but with Swords Dance/Agility as one of the moves. Focus Sash again can allow for a Swords Dance/Agility, assuming there is no Sandstorm/Hail or Stealth Rock in the way. The former should be very rare due to the lack of permanent weather inducers in UU.

Insect Endeavor

Salac Berry Jolly / Adamant
Moveset EVs
~ Endeavor
~ Substitute / Endure
~ Pursuit
~ X-Scissor
252 Atk / 6 Def / 252 Spe

Endeavor is one of Beedrill's more novel options, and you could use either Substitute or Endure to accomplish this. Endure is simple: predict something that will kill you, and you will be left with 1 HP. Salac will activate, and you can start sweeping. With Substitute, you Substitute down to 1 HP(assuming the opponent breaks your Substitute every time) and then Endeavor sweep with Salac activated. Sand Stream or Hail can ruin Beedrill's sweep this way, and Stealth Rock is still a big bother.

Make sure to use an amount of HP not divisible by 4 when using Substitute/Endeavor, so you can Sub down to 1 HP.

Other Options

Beedrill can use U-turn on many of the sets, if it feels threatened enough to do so. Pin Missile/Twineedle may be useful in breaking Substitutes, although you are better off using X-Scissor. On the Endeavor set, Swords Dance can be used over Pursuit in case your opponent does not break one of your Substitutes, giving you some extra power to hit them with X-Scissor.

Opinion

Beedrill can be viable in environments like UU or NU, but Stealth Rock is always a problem. One notable fact is that after a Swords Dance, Beedrill is capable of OHKOing max HP/min Def Tyranitar with X-Scissor.

Counters

Steel Pokémon can easily switch into both Beedrill's STAB moves, but have to watch out for Brick Break (Probopass and Aggron). Beedrill has a hard time passing Gligar, who can also OHKO it with Aerial Ace or Earthquake. If a Pokémon can survive one of Beedrill's STAB moves after a Swords Dance, it is a Beedrill counter. Stealth Rock, which deals 25% to the bee, is also a great way of dealing with Beedrill.
