Of all the Pokémon that can set up Sunny Day (barring Groudon), this is probably one of the best. The Special Defense boost works in Cherrim's favor, and it's not like Cherrim's movepool is really begging for slots. Protect is great for 2v2 use, but for 1v1 you might like GrassWhistle.
Other Options
The only moves that Cherrim learns that aren't Normal or Grass are Toxic, Sunny Day, and Rest. Cherrim's best physical attack is Razor Leaf. It gets Aromatherapy, but is vastly inferior to other Aromatherapists, like Meganium and Vileplume. Similarly, it can use Leech Seed, perhaps in conjunction with Substitute, but it lacks the movepool and stats for this strategy.
EVs
Cherrim should just maximize its Special Attack and Special Defense, and hope for the best. Still, don't expect it to kill or survive anything.
Opinion
In 2v2, you can make a whole team around Cherrim and probably get some awesome results—in JAA style, paired with a Groudon, expect things to die horribly. In 1v1, the results are also awesome—for your opponent, though.
Counters
Fire-types love Cherrim and counter it with ease. Most anything with a Flying move works as well—Altaria in particular, who resists Grass 4x as well as Fire.
