I think from looking on other teams and my own HO one there are two ways to play Hyper Offense in UU.
a) Using bulky (or fast) lead to throw spikes/stealth rock, few more frail attackers and one or two wall-breakers, which don't use stat-up moves like Mixed Blaziken or Honchkrow, based more on resistances then bulk. I think those type of teams appreciate to use pokemon, which don't concentrate only on one attacking spectrum (and mostly are mixed) and I still think that using pure special attacker isn't the best idea like in OU (now with Latias Special HO in OU is even harder), as they're easier to wall making your sweeping job harder. You don't want to Milotic being stopped by Venusaur, which switches in and cripples one of your team members with Sleep Powder, crippling your offensive power and for example cripples another switch with Stun Spore. I think Hyper Offense on special side in UU should stick with using ghost-types (Mismagius, SubCharge Rotom, Sweeping Drifblim, Haunter with Destiny Bond may also be interesting, as ghosts may set-up on many opponents and they don't mind that much some special walls unlike other types) or something that may use Explosion to take something with boom like Rock Polish Camerupt.
b) Making UU team a bit OU-Like with standard Dual Screens and abusing bulk, which those screens provides. I'm running this type of team and I'm satisfied. The main problem is that viable pokemon with both screens in UU are... Uxie and Alakazam, which Uxie is the only one with access to Stealth Rock (however, I think you may try to use Lunatone/Solrock as they're not that slow and Explosion is nice bonus to take something out). That type of team dislikes Taunt, however I can win matches even against opponent which abuse it. But it has one advantage - if you screw up, screen may help you tank some hits and stop from sweeping for example Raikou or Gallade. This kind of team also takes better priorities, which is good bonus as you don't want your sweep totally stopped because Rhyperior met Technitop and behind screen he can even set up on him.
