I think this is a holdover from last gen when there was no team preview. You didn't have enough info to make predictions about their team and what they might switch in on the first turn. After a few switches you knew more and could predict with better accuracy.
Before continuing, I'd like to say that I don't know why my Minccino has had -10% evasion this whole time. Larvitar is the one with a -speed nature. Perhaps this has affected outcomes perhaps not, but I dropped the ball on calling it earlier so I'm fine with everything staying as it is.

This was cleared up recently. You can have up to 2 subs, the first can be against any mon. The second sub can only be against a 2 sub mon.
It hasn't been clarified whether each mon gets those subs or not, though i think most people ref that each does.

My substitution should have redirected my attacks to Pidgey on action 1, which would leave Pidgey paralyzed and with less health which could have a non-trivial effect on the rest of the round.
