Why does first set say: 4 HP EVs and then drops off HP IVs to even them? Just put those 4 to either Defence stat.

Dropping to 240 gives 417 max HP for Leftovers number.

The sole benefit is that you need to use less EVs, which in turn can be spent on defences, making one Hp count for more. I.E Shuckle recovers 100 hp vs. Wailord recovers 100 hp.
