Lando-t and garchomp have amazing stats, movepools, and abilities, making them incredibly great in OU despite the nasty ice weakness. Ice is one of the best attack types in the game, sure. If only special attackers were used, whole teams could easily be walled by chansey. Physical attackers are still important and useful, despite those annoyances for it you listed.
