Still kicking around ideas, but here's attempt number one: It's a sort of swamp moss ghost. As soon as I drew this, I realized it looks an awful lot like something from The Last Airbender. Ah well.

Dude...these are amazing! Your balance and blending of color in the watercolors is awesome in itself, but I think I'm most in love with your crazy line-art skills! Keep up the awesome work!

Here's an idea I'm kicking around: it's an electric eel/oarfish/sea serpent. Not quite as innovative as the tiger shark or the glowing shrimp, but hey, it doesn't hurt to try. The colors are kind of horrific at the moment, but I'll fix them later on...
