He says the IVs. When he says "Stats like this, they can't be bet!" your IV(s) are 31 and when he says for example "But its Attack.... it's terrible." it means that your IV is 0

You should give charmander the everstone to make sure it passes down the correct nature, then work your way up into a charmander with more perfect IVs and breed it with the dragonite until you get the desired spread. Just make sure the new charmander has 31 IVs in HP so all relevant IVs are maxed in at least one of the parents.
