this is tough, if I take those 3 Solarbeams I'll die and that would be just pitiful... so how can I turn this around?

well, lemme see, let's go with a Dig, the first Solarbeam will hit hard but just take it, stay underground for the for the rest of the round and only hit on the third action

why did Blaziken get 2 Subs?

Because Swampert has a base rank total of 19 and your one has 24 moves, which is enough for Blaziken to get 2 substitutions.
