Cherrium training help

I'm playing Heartgold right now and I'm wondering which Cherrium I should use? I'm currently breeding for the best IV's possible by inbreeding (te-he) and I got a really good one. Here's the IV's on the latest one:
31 11 31 31 21 0
And it's modest with the EV spread of HP 255 Def 208 Sp.A 8 or 4 and Sp.D EV 40. Yeah, it's defensive. Unfortunately, the Speed was the lowest possible. Here's my other one I did some time ago:
24 23 31 29 30 23
Showing the stats at level 100 because I did a EV spread simlar to the one above, but I forgot it
337 133 229 228 201 198
