Sharpedo is a strong wallbreaker in the RU tier, it has no real "counters." Sharpedo mainly fits on HO teams with spike stack.

behold defensive sharpedo using its phenominal defensive typing and 70/40/40 bulk. walling the SS RU metagames scariest specail attacker the chandlure. sadly sharpedo's offenses aren't that high onlt having a base spa of 95.
Introducing...defensive Sharpedo! The main thing that drives this set is the sheer amount of passive damage it can do, with Scald burns, Toxic damage, and Rough Skin + Rocky Helmet. You can lure in water resistant/immune Pokemon like Volcanion, Gastrodon, Milotic, Noivern, Zarude, and the like, and cripple them with debilitating status aliments. Flip Turn is a great move used for pivoting out of bad matchups that the shark cannot handle.
Find that your Sharpedo is taking too much chip over the course of the game? You can run Rest over protect, if that's the case. Maybe even add a cleric if you can fit it!
Maybe you don't think that either of those are good options...Endure may be what floats your boat. You can stack on extra chip and force multiple 50/50s with the opponent that way.

This set was produced by multiple passionate Sharpedo engineers. This set makes use of Sharpedos stunning 70/40/40 defense stats and Flip Furn to switch into various threats and pivot out into a teammate. This set will most likely become one of sharks top sets!
Whirlpool is a fun move that Sharpedo learns and I figured offensive sets have already been done to death on this mon so I wanted to come up with something new. The EVs are there so that a Milotic Scald doesn't break the Substitute, but otherwise, this set is pretty straightforward. Click Whirlpool on stuff after you get behind a Substitute and then proceed to stall them out with Toxic + Sub + Protect. This weirdly enough could be a pretty effective Milotic lure, although it doesn't work too well if Milotic is running Flip Turn since VoltTurn moves ignore trapping effects.

This is an amazing versatile Pokemon, so much that I can take a completely different approach to everyone above me! At the cost of some power and coverage, Destiny Bond in conjunction with a Focus Sash makes Sharpedo the tier's most reliable emergency revenge killer to an out-of-control sweeper. I suppose you could use minimised defenses, but Sharpedo can survive a small number of weaker attacks with 31 IVs, so I decided that was more useful, giving Sharpedo a slightly easier time chipping down some weaker walls.

General idea: CB cleaner
The addition of flip Turn makes CB Sharpedo one of the few Choice Band users able to run an Adamant nature and outspeed a good portion of the metagame after a +1 Spe boost.
The first three attacking moves are standard; the 4th one is Flip Turn in order to have a move to keep the momentum on a predicted switch. This move makes viable sets with a Choice item in my opinion.
The sheer power of CB allows Sharpedo to achieve some 2HKOs/OHKO with neutral hits even though it fails to 2HKO defensive Gastrodon; calcs:

Waterfall seems the most versatile choice to be locked into most of the time.
Close Combat is risky due to that -1 drop on both defenses that makes Sharpedo almost OHKOed by Umbreon's Foul Play.
Team(mates) support
Sharpedo doesn't have to OHKO threats from full, but it is a good cleaner if it comes into the battlefield unscatched in front of a damaged threat, so a slow VolTurn support is perfect. This allows Sharpedo to get a +1 Spe boost for free.
Hazards support is appreciated to begin damaging the opponent's team.

Anti-Lead Sharpedo can be excellent at denying a team's stealth rocks. And then Flip turn/Super Fang on Registeel/Rhyperior/Steelix and Super Fang, then Destiny Bond on Rocky helmet Cobalion. It can also shut down the large amount of setup sweepers in the tier like Cloyster, Klefki and CurseLax along with being able to Destiny Bond on unsuspecting threats later on.

Taking a leaf out of the mixed sets book, but this time Sharpedo's Water STAB with Brine. Normally a very weak move, but when paired with Super Fang you will put any switch-ins immediately under half-health before you subject them to a 130-power STAB move, more power than Hydro Pump can offer up without the drawback of missing sometimes. With the addition of Super Fang, you do sacrifice Protect, and if you want it it'll require dropping a coverage move. This set also benefits if you're able to chip you're opponent, via strategies like VoltTurn or hazard-stacking.
Destiny Bond by TailGlowVM
because I was sniped. Destiny Bond is extremely powerful on a pokemons with Speed Boost because it allows topick an additional kill with little effort.
Some of the finest Sharpedo enginering can be seen in this Sharpedo set using its good bulky and defensive typing to wall one of the most dangerous special attackers in the mighty chandelure not even Milotic can do that well.
