[OVERVIEW]
Gurdurr is able to solidify itself in SS PU as a consistent Defogger with fair bulk. It is able to cripple all entry hazard setters with Knock Off or Drain Punch, which is particularly effective against Gigalith and Regirock. Gurdurr's reasonable bulk allows it to check a fair amount of Pokemon in the tier in a pinch too. However, Gurdurr still finds itself overwhelmed by common special attackers like Whimsicott and Charizard. Gurdurr also competes with Hitmontop as, which is more offensive and has more coverage options. It also competes with Hitmontop as an entry hazard remover; Gurdurr is more bulky, but Hitmontop is more offensive and has better coverage options.

Gurdurr is able to 2HKO Archeops with Drain Punch and avoid being 2HKOed by Magmortar due to the recovery. It can absorb Scalds from Pokemon like Lanturn without worry thanks to Guts. Knock Off hits Psychic-types like Mesprit and Galarian Articuno and wears down Weezing. Rock Slide allows Gurdurr to nail Flying-types such as Charizard, Vikavolt, and Scyther on the switch. Mach Punch picks off weakened Pokemon like offensive Silvally-Steel and Togedemaru. This works especially well when running Bulk Up over Defog, but it is hard to justify over Scrafty. Toxic wears down Pokemon it cannot threaten, like Silvally-Fairy and Palossand. Defensively, Gurdurr has solid synergy with Regirock and Gigalith, as they can consistently switch into Flying-types like Charizard and appreciate Gurdurr removing Spikes and absorbing status. Charizard checks Ribombee and Whimsicott for Gurdurr. Silvally-Fairy and Aromatisse are able to absorb Knock Off so Gurdurr can keep its Eviolite, and they appreciate it wearing down bulky Poison-types in return. Aromatisse provides Wish support too. Bulky Ghost-types such as Cofagrigus and Palossand are not very bothered by Knock Off, making wallbreakers like Haunter useful. Haunter and other special wallbreakers appreciate Gurdurr checking Gigalith and keeping Stealth Rock off the field in return.

Aromatisse provides Wish support too. could mention something to abuse fat ghosts, this set doesnt love palo/cofag/rest rune

The overview could be fleshed out a bit more to better capture what Gurdurr's niche is in the meta, and that's basically pivoting into SR users like Gigalith/Regirock, sponging status and then either removing SR or using Knock Off on its free turns after it's forced them out (you kind of get at the latter point already, but not really the former there). Conceptualizing it as a hazard removal option that beats the tier's most common SR setter in Gigalith is important to say here imo and gives the reader some idea how to build with it - Gurdurr makes for an excellent partner to things threatened by Gigalith, like Charizard, Ribombee, and many other special attackers.

There are a few other downsides to using Gurdurr: (1) in addition to options like Charizard and Whimsicott being terribly common and making life hard for Gurdurr basically every game, (2) Gurdurr's a bit reliant on its Eviolite to eat the hits you want it to, too, and (3) how it sees very little usage as a result of fighting for a slot with Pokemon that provide more in terms of resistances like Scrafty or Pokemon like Hitmontop that are able to squeeze both priority and removal onto the same set (Guts+Defog is a big part of why Gurdurr has a niche still even despite these downsides, though).

Could instead talk about how its bulk lets it live neutral hits from physical attackers like Passimian, Cinccino, Sandslash-Alola, Togedemaru, etc.

Imo, look at the spread a bit more too, especially at that Aggron calc. There might be something more optimal there.
