Role identification: A pretty bulky beast. While it does not gain Dragon Dance yet, it makes up for it by being able to use Rock Polish. Rock Polish is preferred over Autotomize due to Heavy Slam. If you're using Iron Head, Autotomize is the better option to avoid Low Kick damage. Can run a bulky shuffling set etc. Its megas offer it quite a bit of versatility, though.

Role identification: Its offenses remain unchanged from Standard Garchomp, but its marginal increase in bulk, access to Rock Polish makes it a beast in sand. Alternatively, it can use a variation of Garchomp's tank set. No Ferrothorn's surviving that Fire Blast now (alternatively, Fire Punch). A double dance set could be pretty decent when used outside of Sand, as its ability it useless with its STABs.

Role identification: What makes one of the best defensive typings in the game better? Great bulk, an effective 160 attack, and a great defensive ability in Filter. For a pokemon with only two weaknesses, that really is great. What's more, this can fill multiple roles as well: extending from support to all out offense. Garchompite does outclass it in mixed attacking, but this can be a very effective tank.
