1 fresh pie pumpkin, cut in half and cleaned (seeds and stringy orange bits removed), roast in the oven at 325 for 1- 1 and a half hours, when it's done a fork can easily push through the flesh. Remove skin and puree once cooled. Season to taste with sugar (about 1 to 1 and a half cups of icing sugar), ginger , cinnamon (usually the heaviest, a couple of teaspoons), nutmeg, and cloves (you can add a touch of cardamom as well). Place into a pie crust (use whatever crust recipe you prefer, I prefer Tenderflake's recipe for a lard-based crust) and bake according to the crust. Let cool and serve with whipped cream.
