Paradox Mons don't evolve, some of them are not even based on their last evolutionary stage like Jigglypuff or Misdreavus. They do have great BST to compensate tho.

If you mean in battles, yes, they last until the battle ends. You'll need a Tera Orb to Terastallize. Bulbapedia says it's a Key Item, so maybe you can equip items to your Pokémon, like Dynamax.

I think the mice get Parental Bond when they evolve. Having said that, that alone makes me want to use them when the game comes out! Even though I don't know if Parental Bond is one of the OP abilities that got nerfed/reworked.

I looked at the map and I noticed these things that look like giant, tilted and rusty(?) objects (idk how else could I describe them). They're scattered in the majority of Paldea. If I had to guess, I think these objects make Terastallization possible.
