Trails in the Sky First Chapter is my favourite. The story does take a bit of time to get going, but the worldbuilding and character development are all very good and make the set-up feel worth it. There's a lot of effort put into fleshing out the various locations you visit, from the plethora of unique NPC dialogue to the different optional quests you can complete ; it makes the game a whole lot more immersive.

I've not played a ton of other tactical RPGs, but I also really liked the game's combat. The Crafts system in particular was fun to experiment with, being able to use all sorts of character specific skills that can range from damage dealing, to delaying enemy turns, cancelling magic, casting buffs or debuffs, etc. It really added depth to the battling system and made boss battles more satisfying to win.

I've started playing Trails Second Chapter, hopefully that one will become my favourite once I finish it.
