It's a compound adjective, like "must-have" or "up-and-coming". Personally, I blame lazy people over time for the origination of the non-hyphenated version. :C

I mean, it doesn't hurt to have the hyphen, but it's not a necessary change. And English is a lazy language haha. It basically just took words from a ton of different languages and melting-potted them.
