I would say for this week it would be 5pm my time - I'm at a conference today and tomorrow and working on Sunday, unfortunately.

Unfortunately, basically the same times as the weekend seeing as I work full time.

It’s very difficult for me to make 2am-7am work at all
I can't do Sunday GMT -5 -> I work on Mondays and I'm GMT +10.
It's also a very shitty weekend in general, I can do like Saturday or Sunday my time 5pm to 10pm both days which looks like 2-7am for you on Saturday and Sunday mornings respectively, which doesn't sound feasible, unless you're okay with those times?
