What you're missing here is the fact that it gets pain split. As such, it can easily turn into a free Destiny Bond if used correctly.

I think the entire reason Megas exist is due to the backlash against the Gen 4 evos to older Pokemon. They're trying to avoid that, so we likely won't see any more actual evos besides Eevee.

If the only big boost is to its defense, it's gonna be pretty situational. If it loses speed like Garchomp did, then it's completely useless.
