Gengar most likely couldn't survive a Bullet Punch so he scouted with Skarmory the move he would normally use if Gengar was out there. Since he used Crunch, he knew that a Bullet Punch wasn't coming and could go first.

I'm pretty sure that the doubled attack stat wouldn't be transferred to defense. Most likely the defensive stat that becomes his attack will be doubled.

Breeding is actually very easy. It's just time consuming. Getting three 31 IVed pokes is a piece of cake, only takes like an hour to do it if you have all of the pre-breeding stuff done. It's just having the patience to go further than three 31 IVs that makes the difference in a good IVed...
