Breeding mechanics, I need a better explanation to this

I have an Axew female with 4 IVs (HP/SPA/SDEF/SPD) breeding with a gible male with 5 IV's (all but HP)
the gible has the destiny knot, Axew has an everstone.

so the situation is this, I breed them together, first egg 5 IV's (very nice :D) second 1 only 2 IV's....
and a few 3's.
now from what I read regarding the destiny knot is that 5 random IV's transfer over from 1 pokemon.
I basically can not see where only 2 31's has come from.

5 Random IVs transfer from the combination of two parents.

There are a total of 12 IVs total between the two parents that can be inherited, and the Destiny Knot ensures 5/12 get passed down.

So in the case of your 2-IV, it inherited HP from Gible, Attack and Defense from Axew, and the fourth imperfect IV was the result of the random (6th) IV.
 
ok thanks, is there a way to keep this more consistant as i also got an axew with 5 IV's and wish to breed them together.

Best way is to switch out the parents as you get Pokemon with better IVs. When two parents both have a 31 in a desired stat, the chance is much higher than it will be passed on. You can find out pretty much everything you want to know here.
