Corviknight makes for an excellent wincon in the OU metagame, capable of overwhelming common defensive Pokemon such as Toxapex, Ferrothorn, and Galarian Corsola if it's running Hex. On top of that, Corviknight one of the best checks to Excadrill. Due to the tier's lack of solid Flying-resistant Pokemon, Corviknight can overwhelm many bulkier builds with just Brave Bird. Running Brave Bird also has the added benefit of Max Airstream while Dynamaxed, allowing Corviknight to rack up multiple Speed boosts and making it lethal against offensively oriented teams. Substitute enables Corviknight to avoid being burned by Toxapex's Scald and Galarian Corsola's Will-O-Wisp while also letting it PP stall and overwhelm many more passive Pokemon in tandem with Pressure and Bulk Up. Although Mirror Armor may seem like an appealing option in order to deny stat drops in general, Pressure is the preferred ability because it allows Corviknight to PP stall most notably Toxapex but many other Pokemon as well. The given EV spread allows Corviknight to survive two Swords Dance-boosted Max Steelspikes from Excadrill after using Bulk Up. 88 Speed EVs enable Corviknight to outrun Modest Dragapult at +2, which Corviknight can attain through Dynamaxing and using Max Airstream. The rest of the EVs alongside a Careful nature make Corviknight as specially bulky as possible, minimizing the damage taken from threats like Dragapult and Toxapex.

Corviknight is weak to Rotom-H, Rotom-W, Aegislash, and Toxtricity, so it's essential to pack solid checks to them like Mandibuzz, Seismitoad, Gastrodon, and Ferrothorn. Toxapex deserves a special mention because it often gets the opportunity to cripple Rotom-H and Rotom-W with Toxic, allowing Corviknight to pressure them much more easily, while also being a good check to Aegislash.

Brave Bird enables Corviknight to pressure Pokemon such as Kommo-o and Hawlucha. U-turn allows Corviknight to gain momentum against common Pokemon such as Aegislash, Rotom-H, and Rotom-W. Body Press can be run to pressure Excadrill and Tyranitar more immediately. Bulk Up is also an option that can be run on Brave Bird variants instead of U-turn to prevent Excadrill from overwhelming Corviknight while also making it less passive in general. Lastly, Taunt is an option to prevent Ferrothorn from crippling Corviknight and continually setting hazards. Although Mirror Armor has some appeals, Pressure is preferred because it gives Corviknight an upper-hand against most hazard setters. 252 HP EVs in tandem with 180 Special Defense EVs make Modest Dragapult unable to 2HKO Corviknight with a Choice Specs-boosted Shadow Ball. The rest of the EVs are put into Defense alongside an Impish nature in order to check Pokemon such as Excadrill better.

If running U-turn, it's desirable to run Ditto alongside Corviknight, as Excadrill can overwhelm Corviknight. Because Corviknight struggles to deal with Pokemon such as Aegislash, Rotom-H, and Rotom-W, you should pair it with teammates such as Hydreigon, Dragapult, and Clefable to take advantage of them. Toxapex is a notable defensive teammate because it can check Pokemon such as Dragapult and Cinderace consistently. It should also be noted that between Corviknight and Toxapex, you'll be able to PP stall Aegislash and opposing Corviknight pretty well.

I think Body Press should be on this one as it helps deal with Excadrill specifically (I guess it depends on your team though), but also hits Fighting weak Pokemon like Tyranitar, etc. Taunt means you keep hazards off vs Ferrothorn and of course does other usual Taunt things, and I think that definitely deserves a mention.

Body Press should be slashed with U-Turn on the second set, u need Brave Bird and U-Turn into a revenge killer handles Drill already

Because of the lack of solid hazard removal options in SS, Corviknight is a good option as a Defogger for many bulkier teams

I dont think mentioning the lack of removal is necessary, corvs an excellent defogger anyway

A sentence on why Pressure is the preferred ability over Mirror Armor would be really helpful. I think that's going to be a common point of confusion for newer/more casual players, given that Corviknight is kind of a special Pokemon with special new unique ability and all that.

i'd shift a bit more focus to pressure throughout the set, since that's really what allows this to be as oppresive as it currently is.

Corviknight is weak to Aegislash, Rotom-H, and Rotom-W on the short-term

mention Toxtricity here, specifically after Rotoms, since it doesn't care about corvi's sub at all and is one of the better offensive checks to it. while at it, probably move Aegislash behind Rotoms, make the order something like Rotoms > Aegi > Tox.

probably add Seismitoad to partners in front of Gastro, since it does the same thing with blocking Rotom but also has rocks + deals with the fossils better.

i assume u meant U-turn and not Brave Bird, so change that

move Hydra before Dragapult, it's a better abuser of those for the most part + synergizes really well w/ Corvi defensively

add Pex as a really good defensive partner for this set

For the defog set, an ev spread of 252 HP / 76 Def / 180 SpD with an Impish nature is better as you hit the same benchmark for Dragapult while also getting 4 extra points in defense.
