Encore's effects vs. a Rest/Sleep Talk set

Hey, what will happen if my opponent uses Rest and I use Encore?

What would happen if they used Rest last turn, then they use Sleep Talk and I hit them with Encore now?

AFAIK, they'll keep on trying to use Rest/Sleep Talk.
