Venusaur is a great lead. Sleep Powder is one of the only reliable sleep moves, especially now that hypnosis got an accuracy drop. Leaf Storm helps to hit things hard.

Special Wall. Platinum gave Grumpig Signal Beam, a slightly stronger option over hidden power [bug] with a chance of confusion. Helps by absorb status for my team and wall special attackers not named Venemoth. Thick Fat is useful, too.

Ugh, my physical sweeper. Dragon Dances to boost it attack and speed, sweeps and then roosts to recover life orb (and stealth rock) damage. I don't think its working well for my team, but I can't find anything to fit in its place.

I love this thing. Magic Guard prevents life orb and entry hazard damage, which is great, and it can absorb will-o-wisps and toxics, calm mind up and sweep, healing when necessary. Fighting Pokemon stop this though, but Weezing takes care of them.

EDIT: My main problem I think is with Venemoth.
 
I agree, a Choice Specs Venomoth absolutely wrecks your team. However, with a slight change in EV investment, that can all be changed. If you change your Altaria to Calm 252 HP / 252 SpD(and replace the orb for leftovers) you can avoid the 2HKO from Bug Buzz every time, roost off the damage, and keep on kicking. However, it may look like im suggesting you change your set too, but quite the contrary, the offensive set with the defensive EVs is a great combination. Most people's answer to Altaria is an Ice attack from the special end of the spectrum, however with those EVs and nature, most Ice attacks of UU will do ~60% meaning you can Roost until you can take a hit and Dragon Dance again. This allows you to get an obscene amount of boosts, many more than you would have without the bulky set. It's actually Altaria's best hope for sweeping.

Using this EV spread also helps to combat against your Dark Pulse Ninetales weakness. Dark Pulse lets Ninetales take out your only special wall, Grumpig, and then destroy the rest of your team. Your only real answer is to Sleep it with Venusaur, but that's really only a temporary fix, and if you already used your sleep (likely since it's your lead), you are definitely in a pickle. Using a Specially Bulky Altaria allows you to take care of Ninetales handidly, as at best +2 Life Orb Ninetales using Dark Pulse manages to do 38% while you can easily best it with Earthquake and Roost off the damage.

tl;dr... use Calm 252 HP / 4 Atk / 252 SpD on your Altaria, it helps patch up that Venomoth weakness you mentioned, gives Altaria a better chance to sweep, and helps with a weakness you didn't even know you had.
 
To be honest, Scarfsaur doesn't really impress me and I don't know why so many people use it. I myself am running Specssuar with Sleep Powder which does wonders. Leading with it is amazing, for everyone expects status and a STAB leafstorm off Specs dents everything hard.

I agree with the bulky Alteria suggestion. Same moveset but revised EV's can do wonders with Alteria's many resistences and Roost.

With Steelix, try Gyro Ball over Stone Edge. Most fliers already take a ton of damamge from that. Things like Drifblim you shouldn't really be staying in on, so I've found Gyro Ball to be preferable, with a Relaxed nature. Also, unless you're attached to Explosion and have found it to be useful for your team, try Roar over for some phazing action.

That Defensive Altaria sounds like a good idea, but you mean Careful, not Calm right? Speaking of which, I just remembered Altaria gets Outrage, so would that be a good idea over Dragon Claw?

Gyro Ball sounds a good idea on Steelix, especially because I have Weezing as well. I'll try Roar over Explosion, too.

I agree on Scarf Venusaur, especially because I've found Earthquake on Venusaur not entirely useful, and the analysis has it there to counter Raikou, which obviously isn't in UU. Is there a better replacement? I'll might try it out later, but I like to have a fast scarf Pokemon on my team.
 
Don't forget to use Leftovers on Altaria, if you don't then you won't recover the necessary amount after a Roost. And for that defensive Altaria spread, Outrage is really the better move, you need the extra power.

Venusaur should really be using both of its STAB moves... try replacing Earthquake with Sludge Bomb, it gets pretty nice coverage with Grass, hitting Grass for SE damage.
