Quick questions from a newbie about Smeargle

Hey everyone, I'm trying to EV train and Sketch a Smeargle as my lead and my paranoid brain came up with a conundrum. Basically how can I put him in fights to Sketch the moves I need while not earning him any EVs yet. I know I'm going to use the double battle method on the girls on Rt. 15 but would I have to make sure he faints so he doesn't gain any EVs after I Sketch the move from my other Pokemon? My similar question is, would he still get EVs along with exp. if I simply switch him out after the Sketch?

why don't you just get the EV's and then get the sketches, he doesn't have to make the KO to get the points

Or you could level him up at the day care first, and then sketch in a doubles battle, so that after you sketch you knock him out. That's how I would do it.
