Despite being too weak to Zacian and Zamazenta, Umbreon still manages to find a niche in the Ubers metagame, since it offers a way to count on dragapult, aegislash and tyranitar especially, has access to support moves (Yawn, Wish, Moonlight , etc ...), which makes it a decent wall in the Ubers metagame
It works in stalls, so mons like Corsola Galar or Toxapex appreciate their valuable support vs Dragapult, Aegislash and Tyranitar, Quagsire manages to hit Zacian-C and Zamazenta-C offensively (with dmax)
