Here's a fun sun team with some classics and some newer spiciness

Torkoal @ Heat Rock
Ability: Drought
EVs: 248 HP / 252 Def / 8 SpA
Bold Nature
IVs: 0 Atk
- Rapid Spin
- Overheat
- Earth Power
- Yawn

He's a classic sun setter/rapid spinner and physical wall (kinda). Standard EVs to keep em alive and maximize the number of time you can set sun. Overheat hits hard early and is great for ferrothorn/corviknight. Yawn is to force a switch if necessary and can be useful when the opponent leads with a special attacker or begins to set up a sweep. The rocky helmet and iron barbs combo lets you bait out contact moves for serious punishes physical sweepers.

Ferrothorn @ Rocky Helmet
Ability: Iron Barbs
Shiny: Yes
EVs: 248 HP / 8 Atk / 252 Def
Impish Nature
- Leech Seed
- Body Press
- Stealth Rock
- Iron Head

Excellent physical wall and rock setter with standard defensive EVs. Leech seed can keep you alive for a suprisingly long time and can sneak a few KOs if the opponent isn't playing carefully. Should be noted that leech seed can be rapid spun, but can't be defoged. Body press is a great move with these stats and demolishes bisharp/excadrill. Iron is good stab and coverage for fairy types, getting those flinches can mean winning the game later in the match too.

Togekiss @ Assault Vest
Ability: Serene Grace
EVs: 128 HP / 252 SpA / 128 SpD
Modest Nature
IVs: 0 Atk
- Air Slash
- Flamethrower
- Aura Sphere
- Dazzling Gleam

This mon has been dominating for obvious reasons. I went with the assault vest set purely for sustain. It makes Togekiss a really good special wall thats eats basically anything besides flash cannon and sludge bomb, but even this set will tank a few thunderbolts and out flinch with serene grace and air slash. Flame thrower melts ferrothorn/excadrill/bisharp/corvikight. Aura sphere for coverage great for tyranitar too, might change this move. Dazzling gleam for stab obviousy great for the gen 8 dragons like dracovish/dragapult.

Charizard @ Choice Scarf
Ability: Solar Power
EVs: 252 SpA / 4 SpD / 252 Spe
Timid Nature
IVs: 0 Atk
- Overheat
- Solar Beam
- Will-O-Wisp
- Dragon Pulse

Classic special sweeper set. Overheat with sun and solar power hits like a truck and often OHKOs mons that resist fire. 1 turn Solar beam for water/rock/ground types great for seismitoad too. Willow wisp to shut down a possible sweep or just sneak in some extra damage, open to switching this move too. Dragon pulse pretty much for dragapult only as this set will outspeed him.

Venusaur @ Life Orb
Ability: Chlorophyll
Shiny: Yes
EVs: 252 SpA / 4 SpD / 252 Spe
Modest Nature
IVs: 0 Atk
- Earth Power
- Solar Beam
- Sludge Bomb
- Weather Ball

Another fast special sweeper with some excellent coverage. Life orb squeezes out some extra damage as Venasaurs Sp.Atk isn't super great. Earth power for fire types also good for zeroara/excadrill. Solarbeam good stab all around might switch for energy ball so I can attack without sun. Sludge bomb good stab great for fairies and getting that poison status. Weather ball is awesome on Venasaur, having that 100 power fire move gives him an unexpected edge against teams that rely on steel types and just hits hard in general.

Zeraora @ Life Orb
Ability: Volt Absorb
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Plasma Fists
- Knock Off
- Close Combat
- Bulk Up

This mon is obviously new so I'm not sold on this set but I like what I've seen so far with it. This guy is super fast and hits hard with his signature move and the electric typing helps with water types which this team has some issues with. Bulk up to set up a sweep and can sneak in some stat boosts when you know the opponent will switch. Knock off hits hard and checks ghost types with close combat does the same for steel and dark. Not much to say with this guy let me know how I can capitalize on his stats better.
====================================

The goal for this team is to do as much work as you can with Togekiss and Zeroara before busting out the sun to clean up. You want to pivot between the appropriate walls to ensure you keep torkoal alive as long as you can and keep that sun up. The reason I have two special sun sweepers is so it's not detrimental to your game if you sack one of them and can keep your momentum going if one gets knocked out. Should torkoal or another core mon takes a big hit, set up leech seed to keep em going. Obviously sun teams are kind of dependant on a single condition so certain tech/strategies can absolutely shut this team down. Please let me know any way I can make these sets more optimal if I should switch any of them out.

I dont get the point of going ferro in a sun offense team, i would recommend going komo-o instead with iron defense rocks body press.

komo-o also gets access to taunt too, so you can prevent hazard stack up too which will prevent you from sweeping with zard and toge

I see now how sun makes Ferro even weaker to fire moves but I think I have him on there for his consistency. He's just so good at squeezing out extra damage against annoying mons, and punishing physical attackers. Will consider the Komo-o idea though I've never really used him.

How would you lay out his stats?

Yes, finally a sun team!
Hi, allow me to comment on your post because I found the possibility of playing with this weather very interesting condition.
I will start to list some typical weaknesses and then advise you of the typical changes and wanted to improve the team.

First of all I tell you that Rotom-H can create several problems for your team, not having a real immunity to the electro type you could risk losing Zeraora with Over Heat boosted in turn by the Sun.
Another possible threat may be Dragapult n Hydreigon due to the fact that it can inflict damage with any set available and you cannot control it in any way since your Togekiss cannot recover hp.

That said let's move on to the changes.
First I suggest you Seimistoad > Ferrothorn. It provides the same utility against Dracovish and moreover he can get hp if a water-type move is made, I would say it's right for you. Is the best check for Rotom-H and with Stealth Rock you don't miss any hazard lack, Knock Off is superb for removing the tools from pokemon that can be annoyer like Toxapex, other Seimistoad and Rotom-W. Scald is for hit Rotom-H, burn Hippo or Ttar.
Earth Power is the second stab move to hit Toxapex n Zaraora without gk.
The second change that I propose is Mandibuzz > Togekiss because is the best answer on Dpult n Hyd, btw is a better pivot thanks to U-Turn can give u more momentum whet the sun is up. Foul Play is to check every boost of Excadrill or Aegislash, also i think that is a good Defogger for the sun team because it suffers the hazards.
In the end i think that Darmanitan is the best sweeper for sun teams. For this reason i think that replace it with Charizard is the best option. Also Trick is a good move to lock Toxapex n Hippo on the switch in. Flare Blitz is destructive with the sun, Earthquake is for hit Ttar n U-turn make more pressure to the Venu sweeps n is used to have more switch control vs bad matchup.
Also Venusaur can run Growth to have more power with the stab n setup vs cminder as Clefable n Hatterenee, n i think that Giga Drain is better than Solar Beam cuz make a little recover on him n can hit with other stab move when the sun isn't up.
The best item to Zeraora n the set Bulk Up is Leftovers cuz make him more longevity to the oppos damages when he boost.
Toxic on Torkoal is a good option vs Pelipper, Mandibuzz, Hippowdown n Rotom W.

That team it’s weak man. Not good at all... Stealth Rocks destroys your team and also Hippo + Scarf Vish.
