Pokemon EV Questions

Hey guys! I have recently started up EV training, and I have been doing really good with it, but I have a question. I know that there is a max stat for every pokemon stat. Recently, I trained an Altaria with a +Spec Def. nature, and I put 255 EV's into it. I know the max Altaria Spec Def. it can have is 339, but mine has 355. How is that possible?

Probably not the right place for this thread, but it's stats are like that because of it's IVs.
