Does Mew copy the stats and move set of the opposing pokemon when it uses Transform just like Ditto does? The description of Transform just says move set.

Yes, when Mew uses Transform, it's the same as Ditto using Transform.
What about Impostor Ditto? Are they the same thing? Probably a dumb question lol... but yeah, I have to make a team as well (having a hard time doing so), I'll message you when I'm ready.

Imposter is basically the move Transform as an ability (just like Magic Bounce is for the move Magic Coat). They both do the same thing but you don't have to waste a turn the click the move.
