The reason I am asking this, is because I just lost a battle that I should've easily won (I lost to a MANTINE) but I lost because my three remaining Pokemon had terrible move sets. It was highly embarrassing.

Is there a way to choose move sets in Pokemon Showdown?

For Random Battles or Challenge Cup: No. Those movesets are completely randomized based on moves that the Pokemon can use effectively (and have been used in the usage stats).
For everything else, perhaps this very helpful diagram could be of assistance (note that I annotated stuff in red to make it easier to read than just ordinary black text, which people can mistaken for the background and not the diagram):

This video I made should help you use PS! effectively, including using the teambuilder and making your own team, as well as choosing a tier. Also, the people in the "Competitive Tutoring" room will be happy to help you. Teambuilder instructions start around the 13 minute mark. To use the teams you make, be sure to pick another tier, such as OU or UU, which should also be shown in the video.

Not that I know of. You have to do it by hand and be sure you give everyone 4 attacks, the right items, abilities and get the EVs right. If you want you can always copy paste others builds with the import feature or save your own for later.
Example:
Valériane (Mienshao) (F) @ Life Orb
Ability: Regenerator
EVs: 4 HP / 252 Atk / 252 Spd
Jolly Nature
- Knock Off
- U-turn
- Fake Out
- High Jump Kick
Example:

They're designed to give you the best possible movesets, as well as EV spreads and abilities. Check them out if you have some trouble teambuilding. :)
