Probably Impish due to Coballion having a great physical movepool. Just me though, never used a Coballion XD

Either would work, as he can utilize special, physical or mixed moveset. Standard on him use to be timid/jolly/naive though, so I don't know what defensive set would be the best for him.
Edit: I would use bold with 30 speed IV's for the moveset HP Ice, Volt Switch, Stealth Rock/Taunt and Thunder Wave. Around 48 Ev's in speed, with maxed HP and rest in def

Personally I say bold if hp ice is an option. As a pivot cobalion really likes volt switch. Then any of rocks/taunt/t wave/closecombat (its preferred even on the bold set according to the analysis)
I would also include flash cannon as an option now that fairies are around

if you breed your 5iv absol with a 6iv mon, the odds of hatching a 6iv egg is only a bit over 1:50 iirc. i landed a 31/31/31/31/31/0 honedge in under half an hour.
