Florges is better overall if you don't have a heal bell Eevee/Sylveon, and Sylveon is also stronger like you mentioned. Really, there isn't a huge difference, but I would use Sylveon if you have access to heal bell+hyper voice. Hyper Voice also goes through subs this gen if I recall correctly :]

I love to use my Sylveon over Florges because Pixilate is far superior to Flower Veil and Symbiosis, the only abilities that Florges gets for now. I only play singles though, so that's why I find Pixilate to be better compared to both of Florges' abilities.

The only thing florges does as well a s sylveon is be a pure special wall..thats it. And its not even by much. Sylveon with eevees tutor moves is more powerful and passes bigger wishes. It also has much better coverage

But florges have much more sp def that is very usefull and he can recover him self quickly

Yea you right, so calm sylvion is better than a calm florges one? But subsitute is not in every battle so the power of the sp def of florges will be very handy, while sylvion passes wishes isnt much high than florges wishes
 
Base Stats - Total: 525 --- 95-65-65-110-130-60 for Sylveon
Base Stats - Total: 552 --- 78-65-68-112-154-75 for Florges

Florges not having any ability that work in singles, but Sylveon get a sub-passing fairy Hypervoice with 117 base power + STAB vs. Florges 95 bp+STAB Moonblast
Mixed Sylveon is better due to the better HP. As support Sylveon is better. As offensive Sylveon is better.
So really, Florges is only better as a pure Sp.Def wall.
