Breeding the gap between various spitbacks in various egg groups in order to start breeding for Field egg group. Right now my best transitions seem to be Ampharos or Exploud. I don't have much interest in mega Ampharos (megas AND dragons are plenty taken care of in my projects) so it's basically Ampharos vs Exploud and I was wondering what you guys would do?

This raises more questions (sorry, I'm a noob at this).
1. What if I breed a Pokemon with a different M/F ratio?
2. How do I ensure the ability I want? (Ex. Magikarp has 1 natural ability but Ralts has 2 OR I breed using non-HA Magikarp to begin with but want a HA Eevee)

Which Hidden Powers are the most useful to have? I feel like RNG'ing my own for when I start breeding again.
I know that electric, fighting, fire, grass, ice, rock, and water are staples.
Should I just do all of them?
Ice for the dragon lulz, Fire for that skarmory and thorn, Ground for that heatran and more, Fighting is a good idea for that idiot ttar, maybe grass for that fire pokemon that can't use solarbeam effectively.
