Go for Jolly, I haven't seen many and it'd be unique.

I hatched two shiny togepis, one 31/31/31/31/31/18 with HP ice, the other 19/18/31/31/31/31 with HP dragon, both calm. Which should I train, the one missing speed or the one missing hp?

The only thing I can think of, on the top of my head, that would be major in outspeeding would be max speed Adamant Azumarill (/w 16 Spe EV's if it were max speed).

I'd go with the one with more HP.

I'd run sassy with levitate, can't really give a solid reason it just works imo.

Hi. When I bred a Pikachu with a light ball with an Ambipom (to get Fake Out), I got a Pichu with guess what. After evolving it (after I remembered Pichus cant produce eggs), I gave it a destiny knot, and the other an Everstone (I wanted Timid). The offspring came out with no Volt Tackle. So I can't tell if it is impossible to breed a 4EM Timid Pikachu with good IVs, or the Pichu forgot it in its short time at the day care.

You need to do destiny knot + light ball. And hope you get the right nature. Easiest way I know of.

So, will I have to sacrifice Volt tackle to get a good nature, and breed for Thunder Punch instead?

In my opinion toss. The defense, like you said, is too low. Speed is also not even maxed out to 31, so you lost speed ties with Gengar, Lati's, Mega Gallade, and other 110 base speed pokemon.

Last check on this Diancie. Considering Keep for RP, since near flawless Hasty/Naive already exist.

Your choice. If you don't want to depend on chance then yeah replace volt tackle. If you want volt tackle because of how awesome it is then keep breeding until the IVs are right and nature is too.
