That is a horrible assumption to make. And while, yes, the horses do die quite quickly from falling damage, having them as all completely invincible would make there being more than one horse pretty obsolete. And Shadowmere isn't invincible, she just has huge health and regen rate.

Doing the same thing, and I've found destruction/restoration to be the most annoying to level. Light armour was easy for me, as I just enchanted a set with high health and health regen, placed my character in front of four dual wielding forsworn and then left and did other stuff. Currently...

My armour rating was so high that it was in the negative hundreds of millions. I got OHKOed by a Skeever. EDIT: you can level alteration really easily by enchanting 4 25% things, then standing in riften market casting detect life and telekinesis at the same time.
