So…..how does STAB get used now, since we can’t use that sentence anymore for moves that match the user’s type.
The word STAB isn't banned or restricted; what the standard is doing is saying to avoid filler phrases. These can include "Thunderbolt is the STAB move of choice, hitting Toxapex" or "Thunderbolt is a great STAB move that hits Toxapex". The issue with these is that there's a lot of unnecessary filler that blocks the main point of the sentence, which is "Thunderbolt hits Toxapex". This standard is about the phrases, not the use of STAB itself, which has not changed.
 
"Defogger" is a noun referring to a Pokemon that uses Defog.
It's formed from Defog + -er. The -er suffix here is being added to the end of a verb to indicate something that does that verb. If the thing being done was "use Defog", it would be "Defog user" and not just "Defogger".

Defogger is already listed in coined terms, which should cover this case, and I think doubling down on mentions would be too cluttery + moving it over entirely would create more confusion than it would resolve. Your reasoning is not incorrect, but fact is when we coined it as a noun it ceased to be (primarily) a verb form, unlike "Taunted", and for the sake of keeping Pandora's box of etymology shut I'd like to keep accepted exceptions listed here limited to pure verb forms.
