Gourgeist-S proves to be a decent physical attacker in the NU metagame thanks to its good Speed tier and access to strong STAB moves like Poltergeist and Power Whip. With said Speed tier, it's able to outspeed Silvally-Dark and non-Choice Scarf Rotom, making it a threatening revenge killer to common attackers. Fire Blast is a decent coverage move that allows Gourgeist-S to hit foes like Ferroseed and itemless Eldegoss. Will-O-Wisp cripples physical threats to Gourgeist-S like Kangaskhan and Silvally-Dark, while Toxic allows Gourgeist-S to cripple foes that wall it completely like Sap Sipper Miltank and Bouffalant. Shadow Sneak could be used as a fourth move to give Gourgeist-S priority, but in most cases, it isn't that useful.

Since Gourgeist-S is unable to effectively pressure Sap Sipper Miltank and Bouffalant, Fighting-types like Toxicroak and Sawk can offensively pressure them. These same partners can also deal with Dark-types like Silvally-Dark and Alolan Persian that Gourgeist-S has trouble with. Silvally-Water and Basculin pair well with Gourgeist-S, given that they can pivot on opposing Water-types such as Lanturn and Wishiwashi and bring in Gourgeist-S. Gourgeist-S is cut down by faster threats like Ninjask and Choice Band Froslass, so having a teammate like Galarian Stunfisk or Alolan Persian to stop them in their tracks is appreciated. Gourgeist-S also appreciates Spikes support from the likes of Garbodor and Ferroseed, which can put threats to it like Toxicroak into range of being OHKOed by Gourgeist-S.

Generalize this latter bit to "strong STAB moves in Poltergeist and Power Whip."

With said Speed tier, it's able to outspeed threats to it like Silvally-Dark and non-Choice Scarf Decidueye. Will-O-Wisp cripples physically attacking threats to Gourgeist-S like Kangaskhan and Sawk. Toxic allows Gourgeist-S to cripple foes that wall it completely like Sap Sipper Miltank and Bouffalant and put them on a timer. Shadow Sneak could be used as a fourth move and give Gourgeist-S priority, but with Poltergeist around, it does more damage in the long run overall.
I'd specify something more relevant than non-Choice Scarf Decidueye.

Combine the two sentences about the status moves into one that talks about how Gourgeist-S can use status moves to cripple checks. I'd also go with Silvally-Dark > Sawk as a Will-O-Wisp target.

The negative to Shadow Sneak isn't a matter of Poltergeist doing more damage; it's more that the priority isn't all that useful in most cases.

Since Gourgeist-S cannot hit Sap Sipper Miltank and Bouffalant, Fighting-types like Toxicroak and Sawk can offensively pressure them. In return, Gourgeist-S can pressure Water-types that Rapidash doesn't like such as Lanturn and Wishiwashi. Gourgeist-S is cut down by faster threats like Choice Band Froslass and Ninjask, so having a teammate like Alolan Persian or Galarian Stunfisk to stop them in their tracks is appreciated.
Nitpick, but slightly reword the phrasing of the first sentence to something more along the lines of Gourgeist-S being unable to effectively pressure the Sap Sipper Normal-types.

Rapidash is fine versus Lanturn thanks to High Horsepower, so it's not a great mention of a Pokemon that Rapidash needs help with. Replace with Silvally-Water.

Flip the examples in this last sentence so that you're not unintentionally saying Ninjask runs Choice Band.

Instead, this part at the end I think should be mentioned, as a ton of our upper end wallbreakers get 1HKO'd and outsped by gourg and with little to no prerequisite chip damage: Decidueye, Basculin, Golurk, and Rotom + Silvally formes like you mentioned, for example). Fire Blast is a decent coverage move that allows Gourgeist-S to hit foes like Ferroseed and itemless Eldegoss. Will-O-Wisp cripples physically attacking threats to Gourgeist-S like Kangaskhan and Silvally-Dark while Toxic allows Gourgeist-S to cripple foes that wall it completely like Sap Sipper Miltank and Bouffalant and put them on a timer (fluff, already mentions the crippling aspect of Toxic).
