Espeon is among the most devastating offensive boosters in GSC OU. With access to both Growth and Morning Sun, in addition to its formidable Speed and Special Attack stats, Espeon threatens many Pokemon and has decent longevity. Psychic is used because it is Espeon's strongest STAB move. Hidden Power Water hits Pokemon like Tyranitar, which walls the combination of Psychic and Hidden Power Fire; conversely, Hidden Power Fire slams Exeggutor, Forretress, and Skarmory. Espeon's defensive stats—namely its Defense—are mediocre, meaning that it should come in sparingly and at moments where it can scare out an opposing Pokemon, such as Nidoking, Gengar, Steelix, or Machamp. Something to note is that Hidden Power Fire Espeon will have reduced bulk due to DV changes. Espeon functions particularly well in late-game situations where a check that thwarts it has been chipped or KOed.

Psychic is the staple offensive move,
I'd rephrase to include STAB

with the second a choice between HP Water and HP Fire. HP Water is helpful to hit Pokemon like Tyranitar, which the combination of Psychic and HP Fire can hardly touch

"walls the combination of psychic and hp fire" feels better

HP Fire, on the other hand, hits Pokemon like Exeggutor and Skarmory hard, which Psychic and HP Water do not.
I'd try to mention that both hidden powers are crucial in hitting steelix, and that hp fire also hits forry, but cuts into espeon's bulk a little (if you can't fit this last part that's alright). you can remove "pokemon like" and "hard" while changing "on the other hand" to "conversely" to save some space

changing this to "mediocre" saves some space

meaning that it should come in sparingly and preferably at moments where it can scare out an opposing Pokemon, such as Nidoking, Gengar, Forretress, or Skarmory.
maybe this can be rephrased to something along the lines of "it should come in on double switches against opposing pokemon it scares such as nidoking, gengar and machamp" (I think champ is more relevant as an espeon opportunity than forry/skarm)

This allows for either a Growth boost or a free offensive move.
this is kind of unnecessary so you can remove it to save some space

Espeon functions particularly well in late-game situations where a check that thwarts it may have already been KOd.
I'd remove "may" and change it to "weakened or KOed"

(This entire sentence is fluff; obviously Psychic is used for STAB, but if that's all its for it's really not worth noting, especially when there's a strict character limit) HP Hidden Power Water hits Pokemon like Tyranitar, which walls the combination of Psychic and HP Hidden Power Fire; conversely, HP Hidden Power Fire slams Exeggutor, Forretress, and Skarmory, (RC) which Psychic and HP Water do not. Espeon's defensive stats—namely its physical Defense—are (I replaced the double hyphens with actual em dashes) mediocre, meaning that it should come in sparingly and at moments where it can scare out an opposing Pokemon, such as Nidoking, Gengar, Steelix (which both HP moves threaten immensely), or Machamp. Of additional note is how an Espeon running HP Fire Make note that Hidden Power Fire Espeon will have reduced defensive bulk due to IV DV changes. Espeon functions particularly well in late-game situations where a check that thwarts it has been chipped or KOd KOed.
