Question on EV Training

Ok, so if I battle 4 zubat's, I get 1 extra point in speed next time I level up.

This makes sense but is very confusing.

What happens if I battle 4 zubat's and then battle a variety of Pokemon until I get to the next level? Like Lets say I have a level 30 Pokemon against a level 15 zubats's, its gonna take a while to get to the next level. Do the Ev's only count for the first 4 pokemon or does go on until the next level, which means I can only face zubat's.

Please someone help me out with my problem.

You can only face zubats until you know you completed EV training in speed. And then you can go on to the next stat. If you battle random pokemons, then your EV training will be messed up since you get random EV's
