Pros & Cons of Tapu Fini!

Pros:
  1. Good Type combination of Water / Fairy makes it a great defensive Tool for many teams especially Bulky Offense and Balance-Teams
  2. Good Stat-Distribution with 115 Defense and 130 Special Defense
  3. A good Defogger with a lot of Utility-Options such as Haze, Nature's Madness, Draining Kiss, Taunt
  4. Great check to many threatening pokemon such as Blaziken, Zygarde, Urshifu (both formes), Cinderace, Crawdaunt, Heatran, Mandibuzz, and Pheromosa
  5. Good Stallbreaker with the combination of Taunt, Nature's Madness and Moonblast (can help vs. Toxapex and Reuniclus)

Cons:
  1. A rather mediocre HP stat with base 70 (A lot of Invest has to go into the HP so Tapu Fini can perform its role as a defensive pokemon properly)
  2. Can drain Momentum
  3. Lack of recovery except Leftovers and Draining Kiss
  4. Vulnerable to Entry Hazards as a Defogger

General Explanation:
Tapu Fini fits best on Bulky Offensive or Balance with a great Typing, good Stats and the ability to perform the role as a Defogger for them to get rid off annoying Entry Hazards during the game. Tapu Fini also makes up for a great check to dangerous Pokemon for those archetypes such as Blaziken, Zygarde, Urshifu, Heatran, and also Pheromosa with resisting most of their STABs and coverage options. Tapu Fini can also work as some kind of a Stallbreaker with the great combination of Taunt to shut down Recovery / Roost and with the help of Nature's Madness alongside Moonblast to slowly wear those pokemon down, such as Toxapex as example.
However, Tapu Fini is vulnerable to many faster threats like Kartana, Rillaboom, Tapu Bulu, Tapu Koko, and Rotom-Heat if it carries no Water-Type STAB, so teammates which checks these threats are necessary. These teammates include Corviknight, Skarmory, Celesteela, Tangrowth, Heatran, and Amoonguss furthermore it appreciates a good electric-immunity like Landorus-Therian, Garchomp, and Zygarde. Tapu Fini also appreciates other bulky pokemon as partners, Ferrothorn can come to mind with setting up Entry Hazards, they also synergize well together as Tapu Fini can check problematic pokemon such as Heatran for it and in return Ferrothorn provides itself as a grass- and electric-resists.

Explanation: Leftovers helps to maintain some longevity during the course of the game. Defog can provide the necessary removal for the rest of the team and the strong combination of Taunt + Nature's Madness can shut down opposing pokemon like Toxapex and makes Tapu Fini really annoying to deal with. Moonblast can be used to hit Zygarde, Urshifu, and Pheromosa really hard, if not straight up OHKOe them. Scald could also be an option to help vs. Blaziken, Rotom-Heat, and Heatran. Furthermore Scald can cripple non-grounded Pokemon with a burn.

Modest Nature

Explanation: This set allows Tapu Fini to act as a bulkier version of a Primarina with setting up a Substitute and a Calm Mind. It can do a Setup on pokemon such as Heatran, which it can abuse as an opportunity to Set-up. The nature Modest is used to provide the maximum of damage output alongside Draining Kiss which gives Tapu Fini some longevity alongside its item Leftovers. Scald is as mentioned before an amazing move due to the possible burn-chance and crippling effect on a lot of pokemon. Moonblast can be used over Draining Kiss but it is on this set the suboptimal choice. The same mention goes for Surf over Scald, Surf is the suboptimal choice.

Other Options:
Knock Off:
to remove annoying items such as Leftovers, heavy-Duty Boots, occosionally Berries.
Haze: can remove status-boosts such as Calm Mind, Swords Dance, Coil or Nasty Plots.
Surf: as another forme of Water-Type STAB.
Rest: could see some usage on Sets with Telepathy instead of Misty Terrain to provide more longevity.

There is also whirlpool as a notable move, it's very good in a lot of matchups
Good point you stated, I think Whirlpool def is worth looking into as it traps Toxapex and then Tapu Fini is able to shut it down completly and can get rid off it in the long term. Thanks for pointing that out! :)
 
Something to keep in mind for the Defog set that should definitely be mentioned in this analysis. Defog now removes terrains from the field as of Gen 8, meaning Tapu Fini gets rid of its own Misty Terrain after using Defog. Whether this is a good or bad thing for Tapu Fini itself is up to the player because it has its pros and cons. Removing Misty Terrain gets rid of Tapu Fini's immunity to status moves like Toxic/Thunder Wave, but this will allow Tapu Fini's Scald to burn grounded targets, and allow Fini to reset the terrain sooner rather than later.
