Introduction:
This is my first serious attempt at UU. I played OU but I was looking for a change. I didn't like NU much, so I started thinking about a UU team. I always liked weather teams and Sunny Day was my favourite weather effect. It isn't too usable in OU due to dragons and co but I could see it would fare better in UU. And so here I am with my newly built team.

Uxie @ Heat Rock
Levitate / Impish
EVs: 252 HP / 180 Def / 76 Spe

When I was thinking of a good Sunny Day lead, Uxie and came to mind right away. I didn't want a frail lead, and Uxie was perfect, in case I needed another supporter later on in the game.

Uxie is a reasonably bulky lead, setting up Sunny Day and the always helpful Stealth Rock. Yawn is one of my favorite moves after using lead Uxie; it annoys people to death. U-turn is for scouting and getting team members in.

A sun team without Tangrowth is pretty crazy to think about. Tangrowth is a monster in the sun, plowing through things with powerful attacks and boosted speed. Power Whip is the STAB of choice and Rock Slide handles flying types like Altaria and Swellow. Earthquake hits fire and steel types, who are obviously dangerous. Swords Dance is to raise attack(obviously) and make Tangrowth even more dangerous.

Victreebel used to be in this spot, but Exeggutor has proven himself to be more powerful and useful in battle. I chose Sleep Powder over Explosion because it was helped me in so many situations. Also, I always explode too soon, so I would use Explosion badly if it was on this moveset. Standard Sunny Day set: Solarbeam and Hidden Power Fire is a decent type combo and Sleep Powder makes threats unable to attack while I switch out.

Arcanine soaks up the fire moves that my poor grass types would be hit with otherwise. He boasts STAB Flare Blitz and can cause havoc with the most powerful priority: Extremespeed. He can heal himself with Morning Sun and hit waters with Thunder Fang on the switch in. Flash Fire > Intimidate on this team for obvious reasons. I tried out Intimidate but there were a few moments when I thought "I wish I had Flash Fire to absorb that fire attack"

Cresselia used to be here but Regirock has proven to be more useful. If Uxie doesn't get up Sunny Day, I switch to Regirock(usually) who gladly sets up the sun. Earthquake and Stone Edge are a given and Explosion lets Regirock explode in the opponents face. In the sun, Regirock's water weakness is halved so it's even sturdier.

Hitmontop is my reliable spinner and yet another Sunny Day user.

It destroys Houndoom, Chansey and Clefable with Close Combat and hit flying types with Stone Edge. The reason I'm going crazy with these moves to hit flying types is because they destroy my team otherwise...and still might.

Victreebel is my special sweeper. It can hit hard with SolarBeam and can put things to sleep with Sleep Powder. Weather Ball is a safe move, it can be useful in Sandstorm/Hail/Rain if for some reason Sun isn't up anymore. Sludge Bomb hits fire and flying Pokemon who switch in to absorb SolarBeam.

I took him out in favour of Exeggutor, who packs more of a punch and can set Sunny Day up too, since he's bulkier.

I don't really have time for a full rate, but here's a quick suggestion: Replace Cresselia with Registeel. With Uxie and Cresselia, you have 2 Ghost weaknesses, and no resists whatsoever. Replacing Cress with Registeel, you gain a Ghost resistance and lose a Ghost weakness. Registeel still learns Sunny Day, and can use T-Wave/Toxic to cripple the opponent, letting Tangrowth/Victreebel sweep more successfully. It also learns Explosion, which it can use immediately after setting up Sun, as it'll do much damage to anything that doesn't resist it, and you can bring in a sweeper afterwards. However, it doesn't learn a screen. My guess is that you'll be able to use the Rain Support moveset, replacing Rain Dance with Sunny Day and Damp Rock for Heat Rock:

I'd personally use Seismic Toss and Thunder Wave. Thunder Wave (obviously) slows the opponent down, letting your sweepers sweep, and has a 25% chance of Sucker Punch/any other priority move failing :). Seismic Toss does steady damage to pretty much everything except for Ghosts, which Earthquake probably wouldn't be hitting anyway (Mismagius and Drifblim).
 
I agree with Engineer Pikachu, having a Ghost resist is important due to Mismagius running around in UU... also, leaving Cresselia unchanged leaved you with FOUR Bug weaknesses, a huge hole in your team.

I think Exeggutor would be a viable addition over Victreebel, as it has a much higher Sp. Attack, and it bulkier than Victreebel as well. The additional weaknesses don't matter much since you will have Registeel to take those super-effective hits, like Bug, Ice, etc.

I'll try Registeel out, I've been testing Regirock on Shoddy and it's doing decently but I'll give Registeel a try.

I'll test that as well. Sorry I forgot to edit Regirock in Cresselia's place. Thanks for the rates :)

Edit: Shoddy is screwing up so testing will have to wait...

Edit: It's working! Recently, the battles I've won...haven't been won by the sunny day sweepers but by Hitmontop/Regirock. Uhh...weird. I'm testing Registeel next. But first I have to actually USE Exeggutor.

Edit: Exeggutor has an extra "punch" which I like. He's a keeper. Next is Registeel. I'm choosing Sleep Powder over Explosion, since it has proven to be very useful.

Surprisingly, when I played a few battles on OU, this team did better than in UU? Maybe thats because I saw no dragons or weather changes though :)
