I know the max is 252, but when I was EV training a Volcarona, I hit the maximum number of EVs after doing Spe. and Sp. Atk horde battling. There wasn't any room left for Def. Evs.

There are 510 max EVs (total). And 252 max in any given stat.
252+252 = 504. Unless you accidentally put some in other stats, you still have 6 (4 effective) which can be placed into Defense.

Save, and then use a reset bag [Super Training tab]. Little numbers will pop up saying "-252", etc. for each stat. Pay attention to the ones other than Special Attack and Speed. Then reload so you don't lose the other (intended) EVs.

If I go 184 HP / 252 SpD / 70 Spe (Normally 200 HP / 252 SpD / 56 Spe) I still outspeed Bisharp but miss out on being able to have 101 HP Subs.

Anyone know how to get a Pokemon asleep? I know the fastest way to get a reset bag is to wake up a resting Pokemon, then hit the bag.

So 212 HP / 224 SpD / 72 Spe with slightly less bulk of course.
