Muk isn’t available for reservation right now - only the sets in the OP are

It's currently Unranked but I expect it to get placed somewhere in the C-ranks in a future VR update. If it's ranked, it'll take up to a couple months before that one opens up since we do these in descending order based on the VR and the C-ranks/D are pretty low.

Instead of just doing Contrary Sweeper Serp, could I do two different sets? A choice scarf sweeper set, and a bulkier leftovers set?

Can i take band weavile? ( first time doing this )
There's a list in the original post of all available mons for reservation, at the moment there are none and Weavile wasn't even in this batch of mons. They release new mons for reservation every couple of weeks I believe. I'm sure one of the mods can give you further insight as to how things are run here, so next time new mons are released be quick and grab one :)
Adding to what was said in the last post, watch in the discord (you can get a writer role for a ping) for when a slate comes up. Then simply choose something from that list to reserve. We go by order on the viability rankings. Weavile doesn't often run band this generation (approx 10% of Weaviles in the standard usage range) compared to the vast majority that run boots (~70%), so it's unlikely for that set to receive an analysis at least for the time being.
