Bisharp is growing a lot in popularity in the VGC meta (especially in Japan) since Intimidate is all over the place now.
For the moveset you run Night Slash over Knock-Off as a dark type stab, Iron Head as a steel type stab and Sucker Punch for priority. For the last move you want to run protect, it's a VGC staple and Bisharp gets extra benefit from it due to its frailty. SD is redundant since most of the time you bring Bisharp when you see the opponent is likely to bring his intimidators and Substitute can be an option if you run enough speed investment but Protect is way safer and if status really bothers you run Lum Berry.
For the EVs you have several options. You can go the standard 4 HP, 252 A and 252 S, you can move some of the speed EVs into HP if you want to be bulkier or you can come up with your own custom EV spread to survive specific threats.
