Choice Band Toxapex is quite unorthodox, although I have a few reasons it can be worth using. First of all, it's an insanely good Calm Mind Tapu Fini lure since Taunt is practically irrelevant and all it does is give Toxapex a free turn to use Gunk Shot. Second, considering Toxapex is far from passive with Choice Band it's capable of getting higher rolls than your opponent anticipates and it can turn games around in an instant. Finally, you can play around reads really well; for example if a Tapu Lele switches in and uses Moonblast due to an obvious switch into your Dark-type, Gunk Shot then obliterates it. The EV spread allows Toxapex to OHKO Choice Scarf Tapu Fini and outpace 12 speed Melmetal.

The aim of this set is to lure in unsuspecting Ground-types such as Landorus-Therian and Garchomp on, say, a Recover, and hit them with an Ice Beam. Keep in mind that you can switch aggressively due to Regenerator sponging damage. Ice Beam with 36 EVs guarantees a 2HKO on Garchomp and Landorus-T. Alternatively, you can hit Tapu Fini with a Sludge Bomb and do over 30% or use Toxic Spikes to pressure more offensive teams.

Iron Defense Toxapex

This set aims to set-up an Iron Defense (or more) to stall the opponent with Recover. If the opponent has no special attackers remaining able to 2HKO Toxapex, they have to resort on hoping for crits.
Iron Defense allows Toxapex to gain more staying power in match-up with physical attackers, so you have to switch-out less than the usual.

252 HP EVs are standard, so no explanation here.
160 Def EVs + a Bold nature is enough to stomach 2 Earthquakes while surviving at +2 Def:
  • 252+ Atk Landorus-Therian Earthquake vs. +2 248 HP / 160+ Def Toxapex: 110-132 (36.3 - 43.5%) -- guaranteed 3HKO after Stealth Rock
The remaining 96 EVs are useful to pump the other side of the spectrum.
I think that this set has potential even though it drops Haze, in order to use Iron Defence, which I consider better when you expected a switch-in of an opposing Earthquake user (common scenario).

its not that "black sludge" specifically is banned, pex's regular sets are banned (defensive sludge / helmet with the normal moves)

idk what this even does lmao This set can help Toxapex take down Clefable, one of the most annoying mons for it to deal with by bluffing its usual defensive set or even SpiteBlock sets. The listed EVs give Pex some major HP investment to keep it bulky with only a bit of Def investment due to its already massive defensive stats. 242 SpA allows Pex to get a guaranteed OHKO on Clef with Merciless Venoshock + Poison Barb. Block keeps Clefable trapped, Toxic allows it to boost Venoshock’s power to insane levels combined with Merciless. Recover allows Pex to actually stay alive when facing Calm Mind sets for Clefable. This is all I could think of for a Venoshock Pex, I’m not sure what else you could actually do with it. I thought of it countering Fini too, but it runs Taunt on practically all of its sets (and Trick on the Scarf ones), so it can’t really do that.

This is great at trapping and killing threats trying to hit you on a haze or recover. Baneful Bunker helps counter u-turners, but teleport is still a massive problem. At least you can knock their item off.
Once you've got them poisoned and bound haze won't even be necessary anymore due to the accumulation of passive damage, you could sack if they're in range to die next turn from poison (or other passive damage).
Oh and going for double BB's is mad fun with this, really riles people up.

WTF is this?! well pex now just counters dragapult, blace, NP torn-t, volcanion. Gunk shot makes it less passive and can force clef, koko, fini, zapdos, etc to not want to switch in. Scald and knock are basic moves to annoy opponents. the defense makes it not so physically frail and able to take hits on both sides... and recover is jsut there jsut in case u get knocked
