Please look at Cereza and Freefaller answers -- the only way to lose EVs is with that EV-reducing Berries.
"After you obtain 510 EVs, you may level your Pokémon up to whatever level you desire." -- from here, but the some of the few changes from Gen IV to Gen V about EVs, are the effect of EV-reducing Berries and the drop of the limitation of EV-training at Lv 100.
I'm pretty sure about it, but if you doubts, I asked about it in a thread. Let's wait an answer.

Nope :) if the Pokémon has 510 EVs, it can't get more EVs, so it can be leveled up without problem.
