I think that you should recommend running Ice Beam and Taunt/Encore over Flip Turn on most sets because relying on Freeze Dry is it's sole Ice STAB makes it much less reliable in its role as a fast Ice/Water attacker because it struggles much more to actually threaten pokemon it needs to hit with Ice moves like Miraidon who doesn't even take 70% on a max roll:
252 SpA Iron Bundle Freeze-Dry vs. 0 HP / 4 SpD Miraidon: 198-234 (58 - 68.6%) -- guaranteed 2HKO

I believe that tera Water is just as good as ice because if it terastilizes it will keep its defensive utility, unlike terastilizing into an Ice type. Another thing is that you can fore OHKOs and 2HKOs after very little chip (like a Flip Turn for example) on pokemon you would struggle to properly threaten otherwise:
