Last Man on Earth was kind of scary, until I realized that SI don't incap you, they just put you at 30 temp health with black and white. After learning this, the game simply became a matter of speeding through and trying not to allow too many SI to follow. In the event that you get hit once, you just need to pick off any tailing SI and then use a medkit. (Medkits are incredibly abundant.) It seems like tanks actually make the level easier, since I don't think the director spawns additional SI while they are alive. On DC, I had a tank that I allowed to follow me from start to the gun shop, at which point I used a molotov and killed it on the straight-away.
The only parts that I found really nerve-wracking were during finales when a tank is chasing you and getting caught means getting killed by the tank. In this sense, playing the game on expert actually makes the game easier (because you get freed from the jocky/hunter faster than you would on normal). I'm not sure if you can unlock the "something to prove" achievement by beating the mutation on expert, but if you can, it's probably the easiest way to do it.
My favorite mutation so far has been Bleed Out. I'd kind of like for Bleed Out to make its way to versus as well, as it solves the main problem with versus mode. Normally, survivors have too many kits and can stall indefinitely to bait spawns, but forcing them to bleed out from the start puts pressure on them and makes for faster and more exciting games.
