Mega Sableye's great defensive stats, immunity to Kartana's Breakneck Blitz and Sacred Sword, and ability to burn Kartana makes it a great counter. Will-O-Wisp is a pretty obvious addition as it cripples Kartana's attack stat making it even more useless against Sableye, Recover is to shrug off any damage given when swapped in, Taunt disables Kartana's ability to stack Swords Dance boosts, and Night Shade provides consistent damage which Kartana can not get back due to its lack of recovery. Using a Mega evolution can come with its downsides as Kartana will do more damage against Sableye's base form which most likely get's swapped in unless Mega evolved previously in the battle. Another big thing is Will-O-Wisp missing or Kartana manages to get more than one Swords Dance boost which can greatly alter Sableye's defensive capabilities.

252 HP Latias is extremely common, whether it's for utility or for Calm Mind stacking. You shouldn't really run full Special Attack which I assume you imply since you've never seen a max HP Latias.
