Hex flawless (31/31/31/31/31/31) can ONLY happen for a caught Pokemon if Modest, Timid, Calm or Docile (correct this one?). If it's hex flawless and ISN'T one of those natures, it's hacked.

Check whether 252 and 248 give the same stat for whatever Pokemon you're using. Sometimes at level 50 you won't get any extra stat points for those 4 extra EVs, so they're better allocated somewhere else where they actually will boost a stat point. Rock and Ground could protect the grass types from fire types, and since grass resists ground, maybe I could still get away with using Earthquake?
Plus I can bring in Cherrim to boost its attack and special defence, making it especially resistant to Surf (Sun+Solid Rock+Flower Gift)
And it even gets Megahorn for something to use in case of other Grass types, though I'll have some fire moves on other Pokemon as well.
I was thinking more about that Exeggutor, too. In a sun team, it could Skill Swap its Chlorophyll boosts to teammates that don't have Chlorophyll for extra sun fun.

Cherrim could always use Protect whenever Rhyperior EQs, and it's not like Rhyperior is EQing every turn since ground immune Pokémon are common in Doubles. A doubles Cherrim pretty much needs Protect anyway to last as long as possible.Your reasoning for using Rhyperior is solid, it seems to work out very well, with one exception. You are seriously underestimating Rhyperior. If you plan on using Cherrim as a teammate for Rhyperior, you must make a heavy physically defensive investment in Cherrim, because 0 Def 4 HP Cherrim is always taken out by 2 Earthquakes from Rhyperior, 0 Def 252 HP Cherrim is still taken out on occasion by 2 Earthquakes, and definitely by 3. Bold 252 HP 252 Def Cherrim is sometimes taken out by 3 Earthquakes, so Cherrim should not be partnered with Rhyperior. Instead use Tropius or Jumpluff
Exeggutor is a must for Sunny Day teams in my opinion, and I think he should be keeping his ability to himself for sweeping.
